Making the Best at Home Eggless Pancakes

This blog post talks about eggless pancakes and how to make them, with a very short story as to how I even got to this recipe in the first place.
Arny’s Diner Perfection
Think back to a time in your life where you experienced the perfect breakfast food, only to discover that you could never recreate its perfection again……..
A travesty.
Now imagine that breakfast food is a pancake.
I have only ever experienced the perfect pancake in my life for a time.
Arny’s was the only place that one could get this spectacular pancake that was the size of a huge plate.
These pancakes were stacked two cakes high and was an order that no human could ever finish (okay this human).
These pancakes were made with some sort of secret blend of something because it would melt in your mouth like a sugar cube and to this day, I have yet to find anything like it.
Arny’s was nestled on a street corner and was a college kid staple for Gonzaga students and or churchgoers in the community.
As a teenager, Arny’s was true to form and was as if you stepped back in time.
The seats were worn in, and sometimes torn, but the black and white checkered floor and pretty much everything else seemed original.
Arny’s owner, who was also the cook was on a first name basis with her regulars and regularly kept her customers laughing and in check.
She was tough, but she was really good at what she did and she kept that place going for a really long time.
Today, the building is pretty much still untouched in its old glory, but the name is now Wolffy’s Hamburger’s (recently closed due to the pandemic)…….which is not the same thing as Arny’s at all when comparing menu’s……
I don’t remember when it was that Arny’s closed its doors for good, but I have never tasted a pancake like the one from Arny’s again.
Discovery of Eggless Pancakes
For years I would try to recreate the perfect pancake that tasted like Arny’s and I would try recipe’s out and I would fail.
Finally, by happy accident, I concocted what I feel is probably the closest I will ever get to Arny’s perfect pancakes.
Who knew that forgetting eggs would make this pancake mystery a semi hack best?
To be honest, I don’t think the recipe on its own is a perfect copy, but with some added help of a very specific type of nonstick spray, a miracle happens to this pancake concoction and I don’t think it’s terrible……in fact, I think it’s good enough to share……and I don’t think you’ll hate it.
The special nonstick spray that helps create the illusion of the perfect pancake is Trader Joe’s “Olive Oil Nonstick Spray” (it comes in a long skinny green bottle with white and yellow lettering).
I have never been more impressed by a cooking spray in my life, as it literally tastes exactly like you are using full on olive oil (make scrambled eggs with it and you’ll be super impressed…..I am not kidding).
If you’re thinking you can just use any nonstick olive oil cooking spray, besides the Trader Joe’s version,I have to tell you that I tried, and I think the only other option is to literally to cook the pancake in olive oil; if you can’t get your hands on the TJ cooking spray.
I have not tried to cook a pancake in pure olive oil ever in my life, so if you do try it, please let me know in the comments how the pancakes turn out.
Eggless Pancake Recipe
Here is the recipe for these eggless pancakes, which are perfect for colder months and weekends.
This recipe makes 5-6 small to medium sized pancakes.
*1 cup of flower
*1 tbs of granulated sugar
- Add in 1/2 tsp of salt
- Next add in 1 /2 tbs of honey
- Pour in 1/2 tsp of vanilla
- Next add in 1/2 tsp of baking powder
- Mix in 1 and 1/4th cup of Oat Milk
- Add in 1/3rd cup of plain Coconut Yogurt (You can use Greek yogurt as well)
- Your favorite maple syrup or honey to pour over your pancakes
- Garnish with additional toppings as you see fit.
Cooking Directions
Turn on your stovetop to medium heat in a greased pan, pour on a serving of the batter (I usually take a measuring cup (any size)) to pour the batter onto the pan, and wait for the batter to bubble on one side before turning over.
You’ll want to make sure the batter is cooked through before serving and you’ll have yourself a really yummy pancake…..
