Peep a Blushing Tom Collins
Tom Collins in all of the cocktail forms is a legend and a staple.
I remember when turning 21, my aunt Maura (a true legend herself) introduced me to the cocktail on my 21st birthday trip to Las Vegas (I partied so hard I haven’t been back).
Also, apparently, a coming-of-age tale of how one begins to like gin.
I loved the drink so much that when I turned 22, I had to make it my signature party drink (my poor friends).
Let’s be honest though, I had no idea how to make a cocktail at 22.
I thought Bud light Lime was the only appropriate beer to chase shots with and I thought simple syrup was a fancy concoction that I couldn’t hack (literally used plain white sugar and wished for the best).
The drinks tasted awful.
Everyone drank them anyways.
What a time to be alive.
Fast forward a decade and some change and I finally have this cocktail down.
Tom Collins With a Twist
For Easter I wanted to present something on the blog that was fun and festive that asks for minimal effort but makes you feel like you really tried.
Because, who has the time right about now?
We all have busy lives and to be fair, Jesus is the reason for the season, so it seems silly to make a drink post, but I wanted to bring some fun to the grown-up’s table.

What You’ll Need
-Pink gin or gin of any kind (we do not discriminate against gin around here)
-One cocktail Shaker
-Ice cubes
-1/3rd of a lemon
-Tonic water
-Simple Syrup
Optional Items
-Peeps
-Red food Coloring or Food coloring of choice
–Small Cocktail Strainer (If you don’t have a bartending set)
Directions
Take two shots of Gin (1.25 oz – 1.5 oz each per shot) (so double those ounces) and place into your cocktail shaker.
I like to pour my shot over two or three ice cubes.
Take The lemon (1/3rd) or a slice (depending on how much lemon you want and squeeze the lemon juice into the cocktail shaker.
Add in your tonic water. I like to pour the tonic water until the cocktail shaker is left with about 1/4th of space left in it.
Take a 1/2 tsp of simple syrup and add it into the cocktail shaker.
(Side note: Simple Syrup is equal parts sugar to water, brought to a boil and cooled in a storing jar).
Add the cocktail shaker lid and give it a few shakes up and down.
Take the lid off and strain while pouring into the cocktail glasses.
For a light pink effect, use pink gin.
For a deeper pink or any color of the rainbow throw in one drop of food coloring (I used red and it matched the pink gin to perfection).
Cut a horizontal line into the underbelly of the peep (I used a bird for a bird bath effect) and place on the rim of the cocktail glass.
Drink and enjoy.
This recipe makes two cocktails.
