Your New Favorite Chicken Mango Salad| Tortilla Chips Included

Did someone say chicken mango salad?
(I had totally forgotten about this salad until a recent craving for this salad hit).
This was my absolute favorite salad during the summer of my senior year of college.
The recipe came from Shape or Self magazine, and I have not been able to find the recipe to link it into the blog post (it was a while ago…like more than a decade ago……and I have yet to find the recipes origins online).
If I remember correctly, a lot of the ingredients that made it fancier I did not have, so I added a few ingredients of my own.
Plus, I’ve kind of remixed it into a tortilla chip inspired salad, as the recipe has progressed.
But I agree in giving credit where credit is due…… and if I didn’t invent the idea or I’ve found inspiration from something, I want to give credit to the proper place.

Why Salad
I love salad.
Especially in the summer when you have in season fruits and veggies.
Add in the summer heat and you really do start craving a lot of other really hydrating foods.
Truth be told, when the heat hits, I am probably not as interested in cooking and salads are just really easy to put together.
What You’ll Need
– Classic store-bought Rotisserie chicken (I told you it was easy)
-Spring Salad Mix
-Mango (I like fresh mango that is in season, but any kind of mango that is thawed or canned and drained will suffice)
-Tortilla Chips
-Mango Salsa (I like the Signature Selection salsa…… because it adds a complimentary sweetness to the fresh mangos already in the salad)
-Guacamole (I use the spicy guacamole from Trader Joe’s, but any store-bought or homemade guacamole will suffice)
-Chickpeas are an optional add in and make a great protein substitute (I used both chicken and chickpeas in the making of this salad)
-Tomatoes
Directions – Assembling the Chicken Mango Salad
Wash the spring salad mix and drain excess water.
Next, cut up the desired amount of chicken (I tend to go with one ounce or so).
Next, cut up the mango…….
Here is the best way to cut up mangos.
Add in your desired proteins.
Top with guacamole and the mango salsa, as this will be your dressing.
I prefer the spicey guacamole from Trader Joe’s, but if you want to make your own here is a really great recipe.
Throw in some tortilla chips as your croutons (I use about four or five chips).
Add in some cut up tomatoes.
Throw all of the ingredients into a bowl with a lid to toss your salad. (These bowls from Target are similar to the ones I use.)
Favorite Accessories for the Salad
I love these bowls because I store a lot of fresh ingredients in them.
I also use these bowls for storing salads and for tossing salads.
I cannot recommend these bowls enough.
If you want this dinnerware set…..I cannot recommend the quality, enough.
This dinnerware set is very me, tbh.
I went and traded my older white dinnerware set for an all-pink set a while back…. but I am back to my old self with my older tastes it seems (thank, God).
But that is really it.
It’s a very easy recipe, especially with store bought ingredients.
It makes it so that you can just throw it together and enjoy and move on with your day.
Why I Love This Chicken Mango Salad
Making a mango chicken salad that I love during the summer is a small joy.
Plus, I appreciate how satiated and full I feel after eating it.
It has all the protein, carbs, crunch, leafy greens, sweetness and saltiness that I crave and I feel energized afterwards.
This salad gives you a lot of bang for its buck.
Also, as an aside…….it pairs really nicely with my Chili Lime Margarita (in case you needed a beverage recommendation to accompany this delicious salad).
