Dairy-Free Pancakes
Dairy free pancakes were not an adventure that I was purposefully seeking out.
It just sort of happened one day when I stopped needing to buy dairy as much as I did.
I was noticing a lot of things with my mental health when I would have dairy.
Greek yogurt was what I used in the last recipe I posted.
I have since switched to using plain cashew yogurt.
Cashew yogurt was the better option after I tried coconut yogurt.
As someone who loathes runny dairy products, I could not get on board with the consistency of that specific nut milk/yogurt.
Dairy Free Choices
Going dairy free on certain things is really a personal choice.
Growing up I was lactose intolerant and found that incorporating yogurt in my diet as I grew in my adolescent and teen years lessened the issues that I had with dairy.
This past February I really started to notice that my mood was increasingly emotional.
I don’t find myself to be an overly emotional or crying type, but I was noticing that crying was becoming more and more frequent.
Life was doing its thing, but emotionally a week of crying was taking its toll.
I thought I should be diagnosed with PMDD, because the crying was only around my period and would last the entire duration of my period.
I went online to see what could be causing it, and a Dr. on YouTube said that if you think you are suffering from PMDD, cut out dairy and see how you feel.
Going to the Doctors
I am not the type of person who will take advice from a video without also checking with my physician (I learned my lesson).
But I am also not the person to totally trust my physician either….
Because as a black woman…
I find that most of what I say is not listened to by many doctors, so I scheduled the appointment and had already started disengaging with dairy products.
The doctor I saw dismissed my claims that my heightened emotions had anything to do with dairy.
She said what I was going through was normal and tried to explain away how women take on more than they need to, and I was being hard on myself for being more emotional than I was used to.
I assured myself that this behavior for myself was NOT normal.
My mental health at that time was NOT normal.
As someone who engages with dairy on a less regular basis since February of this year…. I can confirm, my heightened emotion and crying throughout my menstrual cycle has evened itself out to a mental normal.
Call it a food sensitivity if you will, but I am so glad I stumbled across a Dr. online who suggested that dairy was the cause of much mental anguish.
And if you get a doctor who doesn’t listen to you, find one that does.
Be your own best advocate.
Listen to Your Body
I also have ADHD, which makes listening to my body really hard at times.
Since learning I have ADHD, it has taught me that listening to my body is going to take work, but ultimately, it’s a daily decision that I have to make every day.
I will talk more about having ADHD more on the blog, but for now….this is as deep as I want to get on that subject.
Dairy Free Pancakes
Since I am on the subject of mental health…….
Pancakes are a great mood booster.
I shared my eggless pancake recipe last year on the blog……..
Here is the updated dairy-free recipe.
Fluffy Dairy Free Pancakes
This recipe makes 5-6 small to medium sized pancakes.
*1 cup of flower
*1 tbs of granulated sugar
*1/2 tsp of salt
*1/2 tbs of honey
*1/2 tsp of vanilla
*1/2 tsp of baking powder
*1 and 1/4th cup of Oat Milk
*1/3rd cup of plain Cashew Yogurt
*Trader Joe’s Olive Oil No Stick Spray
*Maple Syrup or Honey to pour over your pancakes
*Garnish with additional toppings as you see fit.
Cooking Directions
Turn on your stovetop to medium heat in a greased pan, pour on a serving of the batter (I usually take a measuring cup (any size)) to pour the batter onto the pan, and wait for the batter to bubble on one side before turning over.
Make sure the batter is cooked through before serving and you’ll have yourself a really yummy pancake…..
