Over the next few weeks, things get really exhausting and fast paced.
Last-minute details are all one can think about, and most of us feel like we are hanging by a wing and a prayer to not get sick before the big event.
As I have gotten older, I realize that meal prepping is NOT for ME at this time, but easy meals are.
During this time of year, I really gravitate to warm dinner options and something that allows me to have leftovers.
with all of the holiday festivities, last minute shopping trips, family and friends to see. I want to be fueled and present.
Here are my top favorite easy dinner ideas.
It’s important to make sure you’re functioning at your highest energetic level and your household is fed, full and happy.
Crock Pot Beef Bourgandy
This is my favorite go-to group meal.
I did not invent this recipe, it’s from a cookbook that I will link here.
But it’s so quick, easy and filling.
You can make this with a base of noodles or potatoes. I prefer this dish with noodles.
Perfect sides: add in a baguette and a bag of pre-made salad.
Chickpea Curry
This meal is my favorite for when I am feeling a little under the weather.
I get my curry sauce pre-made from Trader Joes, or any grocery story really.
Next, I make a stir fry of precut veggies, also bought from Trader Joes, adding in the chickpeas, then the curry sauce and cooking the rice in a pot on the side.
Last time I made this I added in chicken, and it was the perfect addition.
Tater Tot Casserole
Okay, this is a childhood staple of mine.
My grandfather raised cattle, and so I was literally raised on meat and potatoes growing up.
I prefer using turkey to beef for this dish, but either way is delicious.
It takes almost no time at all to make and is very filling.
The perfect comfort food entree for busy weeknights.
Tomato Soup with Grilled Cheese
This is also such a quick and easy meal.
My absolute favorite for a warm soup and salad dinner.
For non-diary options: I use oat milk and plant-based cheeses, but sometimes original diary made products work just fine.
Use what you have at home.
Black Bean Soup
This is another winter staple of mine.
You cannot go wrong with black bean soup.
Perfect with cashew plain yogurt on top and a few tortilla chips.
Delicious.
