Guinness Float
The Guinness Float has peaked my interest for sometime now, I have to admit.
The idea of having a dark dry stout with a top off of ice cream really weirded me out, yet intrigued me.
This is part of the fun of having a blog I guess; you get to test things out you’ve been wanting to try and report back to share what you’ve discovered.
It’s science.
Guinness Itself
Guinness is recognized the world over as possibly the best dry stout beer in existence.
The history of Guinness starts in Dublin, Ireland in 1759, and as of now, in 2022….its popularity is still going strong.
Pretty cool if you ask me.

You’ll Need A Warm Guinness
Making a Guinness float is really easy and the ingredients are pretty self-explanatory.
However, what I will say is that you may or may not want to keep your Guinness experience as authentic as possible.
True Guinness is consumed at room temperature.
This does not mean you literally warm up the Guiness for your Guinness Float, it just means that you refrain from putting it in the fridge when you bring it back from the store.
To American beer enthusiasts this step can be a little off putting, but it really does taste great at room temperature.
Try it.
Ice Cream
You most definitely need an ice cream for your Guinness Float.
I used plain and boring yet exciting at times, vanilla ice cream….
But, I image getting a caramelized and chocolate infused ice cream to doll up your float would be just as delicious.
Many have reported to adding chocolate or caramel syrup on top of their float with sprinkles.
Although adding more sundae type toppings sounds exciting….
I would try the basic version before going full force because the Guinness float is really rich and creamy all on its own.
Guinness as a dry stout is full of flavor.
It is a heavy beer and the ice cream adds a heavy topping.
I’ll get into this later.
An Irish Liqueur
Think Baileys Irish Cream or Brady’s…. which is a decent and also a cheaper alternative to Baileys.
Why will you need an Irish liqueur to add to your Guiness float, you ask?
Well, Guinness on its own is a bitter and dry beer that is also full of flavor.
Ice cream is rich and creamy and also full of flavor.
These flavors are opposite notes on the taste spectrum and so adding a bit of Irish liqueur meets the two strong flavors and marries them in the middle.
Trust me.
I tried the float with and without the Irish liqueur and found that without it……. the Guiness Float was almost intolerable.
The Irish liqueur is a small ingredient, but the taste payoff is worth adding it.
A Guinness Float Worthy Glass
I actually do not have proper beer glasses and I find that this is not something I currently have additional space for, so I used what I have.
So, if like me, you also do not have proper beer glasses, or want a fun and colorful drinking glass that is vintage in soul and modern in that they are new…..I will link my glasses that I used here.
They are the perfect glass for any kind of cocktail or float and really add a level of fun to any hosting situation.
Recipe
-One bottle or can of room temperature Guinness.
-one tsp of Irish liqueur.
-Two scoops of vanilla ice cream or ice cream of your choosing.
– A Glass
Directions
Place your Irish liqueur at the bottom of the glass.
Tilt the glass at a slant and pour in the Guiness.
Let the Guinness settle until you have an inch or so of head on the beer and leave a quarter of the glass open for the ice cream.
Add your desired level of ice cream.
Two scoops were the amount of ice cream used in the photos.
Conclusion
Guinness floats are a really fun way to incorporate traditional Irish beer into the month of March.
A side note to this, is that this recipe is a fun and easy dessert to serve in cocktail glasses over a dinner party situation during all times of the year.
A Guiness float could be used as a birthday cake alternative if everyone is of drinking age and or used as a fun dessert after a heavy meal in the colder months.
What I love about this dessert is that it’s probably best shared with your SO or friends because it is a lot to take in…..
But one thing I can say is that the Guinness float is delicious.
